Individual Amaretto Banoffee pies


This is a luxury take on the traditional banoffee recipe which I created because I love both banoffee and amaretto and thought that they would probably go well together.  It should be eaten in small amounts however since it is very rich.

Serves 4

Ingredients:
16 amaretti biscuits
50g butter
1 can carnation caramel
1 large banana
300ml double cream
1/2 shot amaretto
1 dessert spoon icing sugar
flaked almonds to decorate

Method:

  • Crush the amaretti biscuits
  • Melt the butter and mix with the biscuit crumbs
  • Press into the bottom of four glasses
  • Place in the fridge to cool
  • Spoon the carnation caramel on top of the biscuit base in each glass
  • Slice the banana thinly and divide between the glasses
  • Whip the double cream with the icing sugar until stiff then stir in the amaretto
  • Spoon the cream on top of the bananas
  • Sprinkle the almonds on the top of each one
  • Place in the fridge until chilled and then they are ready to eat
